The ski and ride season may have come to an end here in Eagle County but the summer activities are just getting underway. This interval season between winter and summer in the mountains is one of the best times to come visit. It’s far less crowded, hotels are cheap and most importantly there are great off-season deals at all your favorite restaurants.

Many of the restaurants at Beaver Creek Resort have closed their doors in preparation for the busy summer months. Neighboring towns, Edwards and Avon are up and running with some great specials throughout the end of April and the month of May.

Here are some of the best off-season deals around Beaver Creek Resort:

Cima at Westin Riverfront

Cima is a fairly new restaurant located in the Westin at the base of Beaver Creek. The latin fusion restaurant is owned and operated by world renowned chef Richard Sandoval. His unique mouth-watering dishes are prepared with fresh sustainable seafood, grass-fed beef and locally grown organic produce. Be sure to try one, or two, of the specialty cocktails, each one is unique and delicious.

Cima is offering an off-season special featuring their new spring menu; three courses for $38 every night from 6:00 pm- close. They also have a two for one Sunday brunch buffet special from 9:00 am - 2:00 pm through May 5.

Nozawa Sushi in Avon

If sushi is more your thing, Nozawa in Avon has one of the best deals around, especially for great sushi. Nozawa offers 50 percent off all sushi rolls every day during the off-season. Half off sushi! You can’t beat that deal. The offer is dine-in only from open to close.

Dish in Edwards

Dish is located in the Corner at Edwards building. They offer an outstanding menu of small and large plates perfect for sharing. Their menu changes almost nightly so there’s always something new and delicious to try. For the off-season, Dish will offer a five course tasting menu for only $25 and $25 bottles of wine. They also have $3 happy hour nightly from 5:00 - 6:00 pm featuring red and white wine, their famous greyhounds and bar snacks.

Zino Ristorante in Edwards

Looking for great Italian food and a great atmosphere? Zino is the perfect Italian restaurant located in Riverwalk at Edwards overlooking the Eagle River. The large modern restaurant has a huge bar and plenty of outdoor seating complete with a bocce ball court. You’re guaranteed a great meal in a fun relaxing environment.

During the off-season Zino will feature two courses for $29. Make sure to come hungry, the deal includes anything on the entire menu.

These are just a few of the great mud season deals in Avon and Edwards. There are plenty more restaurants and many more meal deals to be had. Check online and local newspapers for more specials throughout Eagle County. Take advantage of these great prices at some of the best restaurants in the state while they last. Also, be sure to call ahead and make a reservation if possible, these deals get pretty popular with the locals.

Dust off your one piece ski suits and wooden planks, it’s time for the Vintage SkiFest at Beaver Creek. The Vintage SkiFest will be held at Beaver Creek Ski Resort on Saturday April 7. This year’s festivities will feature vintage vendors, alpine races, bump runs and much more. The annual event celebrates ski history, racing and Colorado skiing traditions.

SkiFest kicks off at 9:00 am when the vintage vendors open for the day. You can browse and buy vintage ski clothes, furnishings, artwork and gear. The vintage vendors are new this year and there’s still time for all you vintage ski vendors to get in on the action. If you’d rather rent your vintage ski clothes and gear Beaver Creek has you covered for that too. Visit Vintage Ski World online or give them a call at 1-800-332-6323 to rent some old school ski gear. Perhaps you already have some classic ski digs lying around your house or you still wear them on the slopes every day, I'm not judging, just put them on and get out to the Beav'.

The main events and competitions start at noon. Sign up for the Citizens Ski Race, the Classic Bump Run or just come as a spectator. Blog Post: Beaver Creek: Top five picks for free family fun

I don’t have any kids of my own yet, but when my cousin comes from San Francisco this month with her daughter, we are going to have an action-packed week at Beaver Creek. There are amazing opportunities for free family fun. The hospitality and family programming are two reasons the National Ski Area Association has recognized the resort with the Best Overall Customer Service Program award for three years running.

1. Family Snowshoe Tour. The fun definitely does not stop when the lifts do. There are many kid-friendly activities to choose from. Enjoy the free Family Snowshoe Tour every Tuesday at 4 p.m. In true Beaver Creek fashion, the resort provides a guide, snowshoes, and head lamps, so don’t worry about packing all the extra gear. The tour lasts 1.5 hours and provides the perfect combination of exercise and nature. I have already booked a spot for my relatives. Call for reservations. (970) 754.5313.

2. Family Friday Afternoon Club. New this season, this après event has been a huge success. With FREE snacks and prizes for the kids, and drink specials for you from McCoy's, it’s fun for everyone. Meet ski patrollers, and avalanche dogs, as you enjoy live entertainment. The avalanche grenade toss and live recovery demonstrations are wonderful ways to teach safety to the little ones you love.

3. Cocoa. Beaver Creek pays attention to all the little details. The first treat of the day awaits you at the top of Centennial Express (Chair 6). Friendly staff will greet you with a cup of hot cocoa starting at 9:30 a.m. Beaver Creek knows how to get the day started out right, with smiles, hot chocolate, and the occasional whipped cream nose.

4. Guided Tours. Take your family to Patrol Headquarters at 1:30 p.m. any day and get a guided tour. You can explore the mountain with a ranger or volunteer for 45 minutes. Learn fun facts and experience everything Beaver Creek has to offer.

5. Cookies. You thought free cocoa, and a guided tour were nice, just wait until you come off the slopes at 3 p.m. It’s cookie time. Just like opening day, warm, fresh-baked chocolate chip cookies will be waiting for you. Can you guess how many cookies they hand out each season? 400,000. Get your cookies at the base of Centennial Express, and on the 2^nd level of the escalators.

Blog Post: Live music at Beaver Creek

Where’s the live music slope side in Beaver Creek? There are two amazing outdoor music venues where I plan to spend après hour(s) this spring. Every Sunday from now until the close of the season there will be live music on the sunny deck at Red Tail Camp. The music starts around noon and goes until about 3:00 pm. So pull up a chair, lather on a little more sunscreen, and order up something delicious while you soak up the music and sunshine.

Red Tail Camp is at the base of Chairs 9, 10, and 11, right at the Birds of Prey race course mid-mountain finish area. You can get there by ski or snowboard, of course, but you can also snowshoe there up there using the Wagon Road. The shuttle will also get you there. Just take the Downhill buses from the covered bridge up to Red Tail Camp.

After staring at the last week of March on my calendar all year, spring break is finally right around the corner. The kids will have lots of stories to tell, of new friends from ski school, the thrills of tubing, and family night out at the Vilar Performing Arts Center. As much as we all love to ski, let's face it, that time when you can unbuckle your boots, sit down with a beverage and mow down on a giant plate of nachos is quite possibly one of the best moments of your ski day.

Now that Spring is just around the corner and the days are getting longer we can move our aprés ski parties outside and enjoy the days on the slopes a little longer. Beaver Creek has the most amazing spots to enjoy a drink and a snack after a long day on the mountain.

Here is your guide to aprés ski at Beaver Creek Resort.

Beaver Creek Chophouse

Located directly slope side at the base of the centennial lift, Beaver Creek Chophouse is a great place to meet up with friends and enjoy some delicious appetizers.

The Chophouse offers an appetizer menu complete with oysters, shrimp and crab legs. Best of all, Beaver Creek Chophouse holds a champagne toast at around 3:30 p.m. to cap off every ski day. Oysters and champagne, the perfect end to your day at Beaver Creek.

The Metropolitan

The Metropolitan is new to Beaver Creek this year. They're located at the east side of the ice skating rink in Beaver Creek's main village. The Met is known for their outstanding wine selection which you can sample from a state of the art enomatic wine despenser.

For aprés, The Metropolitan has cups of soup for only $4, meat and cheese plates starting at $15 and small plate tapas starting at only $6. This hip restaurant offers a relaxing atmosphere to wind down after a day of shredding the slopes.

The Dusty Boot

If wine isn't really your thing, just a few steps aways--directly above the Metropolitan to be exact--is The Dusty Boot where they have cold beers on tap and all your favorite bar munchies from nachos to burgers.

The Dusty Boot also has a great happy hour deal every day during the winter season from 3:00 - 6:00 p.m. For $6 you can get any draft beer with 2 sliders or fish tacos or chicken quesadilla or a chicken sandwich with one topping.

Coyote Cafe

When you're in the mood for margaritas and Mexican, Coyote Cafe will have exactly what you crave. Located down the stairs from the centennial lift in the main village Coyote Cafe serves authentic Mexican food and some of the best, and biggest, margaritas in the valley, outside on their heated patio.

If aprés turns into a night out, Coyote Cafe is open late night, serving food until midnight.

Whatever you crave at the end of your ski day Beaver Creek has got you covered from high-end seafood to a bargain burger.

As I follow Lachlan Mackinnon-Patterson into the back for a tour of the kitchen of Frasca Food and Wine in Boulder, the first thing that catches my eyes is a bold quote stenciled on the wall in black paint:

“Treat it like it's yours and someday it will be.” - Thomas Keller

Mackinnon-Patterson should know. He studied under Keller as chef de partie at the renowned French Laundry in California. Frasca Food and Wine as well as the neighboring Pizzaria Locale and Caffe are the brainchilds of Mackinnon-Patterson and his business partner, sommelier Bobby Stuckey. When he isn’t busy running three popular and efficiently run dining establishments, Mackinnon-Patterson is fine tuning their new wine brand, Scarpetta, crafted in Italy.

I’m visiting Mackinnon-Patterson today to talk about the upcoming Beaver Creek Food and Wine Festival, held January 26-28. On January 27, he’s preparing a post-snowshoe gourmet lunch at Grouse Mountain Grill alongside its Executive Chef, David Gutowski. We find a seat in the empty pizzeria to sit. He sips a latte with an artful rosetta fresh from the Caffe next door and I pry for more details about the upcoming lunch.

First things first: food! Are you at liberty to say what you will be preparing for everyone?
Likely the first course and main course. I’ll say that they are two old, traditional dishes paired with some incredible wines.

Your patrons that day will be snowshoeing beforehand. Do you ski or snowboard at all?
Of course! I ski.

Perhaps you can guess what I’m asking next. Where is your favorite place to ski?
Beaver Creek, ironically. The atmosphere is so peaceful and the snow is usually great..

What’s your favorite way to aprés? Do you prefer certain foods or drinks after skiing all day?
I love getting a bowl of super salty peanuts and washing it down with a refreshing beer like Peroni or Heineken.

What's your favorite stick-to-your-ribs winter meal to prepare?
I eat a lot more pizza now because of (newly opened) Pizzeria Locale. I find that pizza is a food that many people favor in the winter months. I also really like pasta with a nice ragu, heavy lasagna, and a creamy risotto.

Can you name some vintages of wine you enjoy during the winter season?
To be completely honest, I prefer white wines in general. In the winter I do drink more red. I really like traditional Spanish red. White truffle season comes in November and December and black truffle season is in January so It's a great time to enjoy red wines. Bobby and I make wine in Italy. Our winemakers and consultants have plans for the next vintage, which always gets us excited. Back here in the U.S., we travel a lot to sell the wine. I don’t get to do as many events like Beaver Creek’s Food and Wine Festival as I have in the past so I’m looking forward to it.

Your name is synonymous with award-winning cuisine. With your credentials, you could work anywhere in the world. Besides owning your these establishments, what keeps you in Colorado?
The outdoor lifestyle. I went for a bike ride before I met you here today. It’s sunny here all the time. Who needs anything else?

Blog Post: What we can learn from Ted Ligety

The best Alpine skiers in the world visit Beaver Creek every year for the annual Birds of Prey World Cup. The site is known for it one of the most prestigious and difficult downhill's on the circuit. But the Giant Slalom venue on the same hill is no picnic.

For the last couple of years The US Ski Team's Ted Ligety has been the number one Giant Slalom skier on the world cup circuit. What he is doing on skis at the moment is defining the sport in that category of skiing. So naturally watching him do what he does can be used as a teachable moment.

Most people might think that ski racing and recreational s skiing have nothing in common. When in fact it is the foundation for the technique and the turn at the highest level. Watching these athletes ski can be used as a model for the average recreational skier. Even more relevant is that their technique can be translated from skiing hard snow conditions over to powder. In fact I always tell people if they can create a perfect carved turn and hard snow conditions with the right equipment the reward of the of "the turn" is much like arcing a perfect turn on a steep Alaskan powder slope.

The collateral bonus to acquiring the proper technique also translates into control of what you are doing on the slope, which equals safety.

Lets look at one of Ted Ligety's winning runs on the Birds of Prey and try to break it down.

What is making Ted Ligety so amazing is his confidence to create huge angles more aggressively and consistently than anyone else on the world cup circuit.

His ability to create massive angles and to generate power directly to his edges on the snow so he can create a clean fast and precise turn where he would he dictates and not the slope he does better than anyone at the moment. It like having a precision sports car.

The angles Ted creates start well before the crossing the fall line where he rolls his angles (thus his skis) onto edge and starts to push into the front of his boots. The result is the ski start to deflect (Bend) from the tip into an arc (the beginning of the turn). He is doing the with so much confidence and power that even on the bullet proof snow conditions of a world cup slope his ski start to track into a turn.

(If he is doing this here just imagine what he could do on a recreational groomed slope. Or imagine what you can do following the steps describe so far.)

As the skis begin to track into an arc Ted keeps the pressure into the front of his boots until the skis track come around to the apex of the turn. As you can imagine a tone of energy is stored with this amount of energy being generated. Once the skis come around to a point that where he will make it to his the next gate he begins to release that energy and actually generates speed. While he is doing all of this take a look at what his upper body is doing. I always tell everyone that skiing is done in the lower extremities with the upper body just along for the ride. In other words keep it quite and square, facing the primary goal.

The movements that Ted is demonstrating on the race course with those conditions are to the highest level. And just has car engineers demonstrate by testing cars at the highest level. The fact is the movements, techniques and engineering is beneficial to keeping the everyday driver safe and efficient.

Beaver Creek Resort has some of the best learn-to-ski terrain in the state. Their easy to find, non-intimidating lesson area is located close to the village at the base of the mountain. Beaver Creek offers a wide range of lessons which are tailored exactly to the type of skier or rider you want to be.

Buckaroo Express Gondola

When learning to ski or snowboard, getting on and off the chairlift can be one of the most intimidating parts of your day. At Beaver Creek you don't even have to touch a chairlift until you are ready.

Learning a new skill can be challenging and it's even more challenging as an adult. Beaver Creek's Three-peat Series lesson is popular as a refresher course or for the beginner adult skier.

The Three-peat offers three consecutive days of group lessons at beginner, intermediate or advanced levels so you are guaranteed to be paired with an instructor and fellow skiers who are all on the same page.

Beaver Creek is a less crowded and non-intimidating mountain which makes for the perfect environment to learn to ski or ride. Get out there and improve your skills or learn a new sport in 2012.

You can’t find a much better backdrop for your holiday season than Beaver Creek Resort and this year they have found a way to make it even more festive.

The first annual Winterfest is taking place all this week at Beaver Creek featuring winter parades, Santa’s Workshop, figure skating performances and much more.

Whether you’re coming to Beaver Creek for the entire week or just one day, there is guaranteed to be a holiday-themed event for the entire family, through Dec. 31.

Winterfest was developed in conjunction with the Beaver Creek Loves Kids program. Beaver Creek Loves Kids is designed to enhance the experience for families and children on and off the slopes. The program offers activities such as Kids Night Out, Movie Nights and new events like Winterfest.

Beaver Creek opened for the season on Wednesday with snow, sunshine and warm chocolate chip cookies.

Each year the Beav' lives up to their slogan "not exactly roughing it" by handing out warm, delicious chocolate chip cookies at the end of every ski day. For the past eight years Beaver Creek has held their annual Chocolate Chip Cookie Competition to kick off the season.

This year's winner, Shannon Bostrom from Georgetown, Colo., was one of 106 entries. In early October chocolate chip cookies start flooding into Beaver Creek when the preliminary round began. Of all those entries, five finalists were chosen. Each of the five finalists prepared 1,000 cookies to hand out for public judging on Beaver Creek's opening day.

"We usually get over a hundred entries and they come from all over the country," said Cat Coughran, Director of Events and Sponsorship for the Beaver Creek Resort Company. "Then we get employees from all the departments throughout the resort to come and taste the cookies and rate them based on appearance, texture, taste and ease of reproduction."

After those 106 entries are narrowed down to five finalists, the public is invited to come and taste the cookies and vote for their favorite. The plaza at Beaver Creek was flooded with cookie tasters on Wednesday afternoon and all 5,000 cookies were devoured in about a half hour.

"When I made the dozen cookies to hand in for the preliminary, it was the first time I had ever tried this recipe," said Shannon Bostrom, Cookie Competition 2011 Champion. "It's crazy to win, I've never won anything before."

The winner received $1,000, the runner-up $500 and third place took home $250.

As if you didn't have enough reasons to come ski Beaver Creek this year, now you have one more; delicious chocolate chip cookies.

Blog Post: Beaver Creek ski resort opens

Beaver Creek mountain opened in style today. Not only were 235 acres, five chairlifts and a terrain park available for skiers to enjoy, but bright blue skies, fresh snow, and warm cookies also helped usher in the 2011-2012 ski season.

Beaver Creek is last of the Vail Resorts to open, Vail, Heavenly, and Northstar opened last weekend and Breckenridge and Keystone were before that. Now EpicMix pins like the Calirado, the Epic Conqueror, and the Captain CO are all up for grabs.

EpicMix photographers captured the action across the entire resort, offering props like a giant cookie to use in photos. The EpicMix photo booth was placed at the base of the Centennial lift, giving every skier and rider the chance to get their opening day moment captured.

First chair at Beaver Creek was hotly contested on opening day, with a group of 13-year-old locals competing against two Colorado transplants for the honor.

"We cooked breakfast burritos in the lift line," Steven Slug of Avon, Colo. said. "We arrived at the hill at 7:45am before anyone else."

Slug and his friend Justin Marshall's favorite part about opening day was actually cooking breakfast in the lift line.

"We get 500 gnar points for cooking breakfast. We're so excited to rip up this mountain," Slug said. "Did you know I'm the best skier on the mountain?"

For those that didn't whip up their own chairlift grub, plenty of on and off hill dining options are available to Beaver Creek guests. Spruce Saddle Restaurant at the top of the Centennial Express is now feeding hungry skiers and the eighth annual Beaver Creek Chocolate Chip Cookie Competition will feed 5,000 people delicious treats. For those that miss the contest, Cookie Time takes place at 3:00pm, where 400,000 cookies are served daily.

Beaver Creek will host another kind of competition when the top ski racers take on the Birds of Prey downhill. Starting Dec. 2, the 2011 Audi Birds of Prey World Cup Race week will start with training, a downhill race, Super-G race, and giant slalom.

Blog Post: Red Sky Ranch hosts top college women golfers

Fall is in the air, and for Vail Resorts' Red Sky Ranch Golf Club, that means it's time for the Golfweek Conference Challenge hosted by The University of Denver and Golfweek Magazine. Now in its second year, the tournament invites 18 female university golf teams from 18 different conferences for three days of competitive stroke play.

Red Sky Ranch is home to two of North America's premiere golf courses, one designed by Tom Fazio and the other by Greg Norman. All rounds of the tournament took place on the challenging Fazio course.

"The Fazio course plays tough everyday, and this week is no exception," Red Sky's head golf professional Chris Lai said. "Nothing was changed from member play last week. We didn't roll the greens or lengthen the rough. Everything is as it would be for regular daily play."

For its part, Golfweek Magazine enjoys co-hosting this event at Red Sky Ranch. "The facility, staff, and course are first class," Golfweek's Lance Ringler said. "The Tom Fazio course is also familiar to the athletes, much like a LPGA Tour event, that's why we would love to have this event here for the next ten years if possible."

Sammie Chergo, head coach for The University of Denver, agreed. "We love coming up this way. The course is in great shape, and the staff members are awesome." Chergo is a Colorado native and former ski racer whose parents worked on ski patrol at Winter Park Resort.

Her DU team is once again a top title contender for the Sun Belt Conference and has amassed a deep team of golfers. Chergo attributes this depth to "recruiting hard workers for both the golf team and the University. These girls put in the time in the classroom as well as on the course and around the community." With all that hard work comes rewards, including eight Sun Belt Conference titles (2004-2011) and two top ten finishes in three years at the NCAA Championships.

In the end, three days of crisp September golf saw teams move up and down the leaderboard, with Oklahoma edging out U.C. Davis by five strokes and Tulsa by seven shots to take the title. DU secured seventh place. No matter what the final scorecards read, when it comes to gorgeous mountain golf in Colorado, especially in the fall, everyone is a winner.

Blog Post: Where to see the leaves change in Beaver Creek

The aspens are starting to change in the high country and soon the mountains will be bursting with bright yellow. Fall is one of the best times to hike in Beaver Creek, but the window of opportunity to see the changing aspen trees is very small. Before you know it, the aspens will be bare and the snow will be falling. Take advantage of this time while it lasts.

Here are three hikes in and around Beaver Creek that are great for autumn aspen viewing.

Beaver Lake Trail
This trail starts at the base of Beaver Creek ski resort on the west side of the Village. Begin hiking west of the Centennial Lift on Five Senses Hiking Trail which will connect to Beaver Lake Trail.

This out-and-back, moderate hike follows a beautiful stream (Beaver Creek) through an evergreen forest opening to large meadows filled with aspens. It is a 3.3 mile hike (6.6 mi round trip) wrapping around the West side of Beaver Creek Mountain and through the Holy Cross Wilderness area.

The turnaround point will be at Beaver Lake. This is the perfect spot to stop and enjoy the mountain scenery or have a mid-hike snack. If you're feeling ambitious, Beaver Lake Trail continues on for another 4 miles (14 miles round trip) to Lower Turquoise Lake.

East Lake Creek
From Beaver Creek take Highway 6 to Lake Creek Rd, in Edwards. Follow Forest Service signs to East Lake Creek trail head. There are two trail heads, West Lake Creek and East Lake Creek, you want the second one.

This is an easy, 4 mile round trip, out and back trail which begins in an amazing aspen forest. The first mile will be a steady climb to about 9,000 feet then a drop to East Lake Creek. The climb down reveals wide open fields full of aspen trees.

Village to Village Trail
Village to Village is one of my favorite hikes and a great way to get in a good work out. The first mile of the hike is straight up Beaver Creek or Arrowhead, depending on which side you choose to start.

This trail goes from Beaver Creek Village, through Bachelor Gulch to Arrowhead Village. See how it gets its name? Village to Village is a great way to see all the aspens on Beaver Creek and Arrowhead Mountains, and the views from the top aren't bad either.

Start at either base village and hike the entire 7 miles to the next one and spot a car, or go as far in as you'd like then hike back. Either way, the entire trail winds in and out of aspen forests, so you're guaranteed some great aspen viewing.

The best time to see the aspens in Eagle County are in late September and very early October. Get up to Beaver Creek and do some hiking while they last.

If the pristine mountain surroundings and beautiful classic architecture of Beaver Creek don’t satisfy your artsy side, the Village has an art gallery around every corner for your cultural cravings.

Use this guide to the art spots in Beaver Creek to create your own little art walk for an afternoon of mountain culture that can’t be found anywhere else.Gallery Row (on the south side of the skating rink) is a good place to start your hunt for beautiful art, and the galleries below are located in this general area.

If your eye seeks something more contemporary check out the Pismo Fine Art Glass Gallery. This unique gallery is not easily missed by the eleven-foot Chihuly glass chandelier, hanging in the main atrium, overlooking the ice skating rink.

Personally, I am a huge fan of Dale Chihuly and this piece was what opened my eyes to all the amazing art that Beaver Creek has to offer. Pismo Fine Art Glass Gallery has beautifully detailed glass sculptures, jewelry and beads.

One gem to definitely meander through is the Walt Horton Fine Art gallery located in the same building as the Park Hyatt. Horton is the artist of the beautiful brass bear in the Village -- one of the most photographed spots in the area.

As you enter and walk around Beaver Creek Village you’ll notice the mountain themed, large brass statues (one of which is the bear by Horton) ; many of them are part of the Knox Gallery. I have a personal bias toward this gallery because their three locations are Denver, Beaver Creek and my favorite little lake-side town of Harbor Springs, Michigan in my home state. The size and detail of these sculptures are captivating.

Discover another side of the art spectrum at the C. Anthony Gallery, which is tucked back in the south side, down gallery row. This gallery houses landscape paintings, sculptures and amazing graphics by artists from around the world. C. Anthony is the last gallery down Gallery Row, which will tempt you to stop in each and every store front before reaching the end.

Whether you’re visiting Beaver Creek for a couple days or you’ve been here many times before, there’s always something new and different to see in and around the village. Once you notice the world-renowned art that is submersed in Beaver Creek it will open up a whole new side to the Village that you may never have noticed before.
